Coffee and Cookies with Friends

Now that I have all of my Christmas shopping done, I can focus on the fun stuff. Like baking and celebrating the season. Thanks to my friends at Folgers, I hosted a Coffee and Cookie Party at my house!

Last month I learned about Folgers Perfect Measures at a super fun event here in Kansas City. Now, I get to share this product with my friends. Insert baking, crafts and a photo booth and you have yourself a banner of a Saturday.

Before we got started with our fun, I made pancakes and bacon to go along with our first cup of coffee. And most importantly we started the movie Elf to get us into the Christmas spirit. We went with the Breakfast Blend and used 14 tabs for 12 cups. The Breakfast Blend is pretty mild so it was perfect.


We added a little creamer (thin mint for the win) and sugar and we were on our way!

Alison brought a craft to work on and Laura and I baked. We made butter cookies - Laura is much more patient than I am so I'm glad she took charge of that one. We also made Oreo Cream Cheese Cookies (recipe later this week) and No-Bake Samoa Bites (amazing). Alison used to work at a chocolate store back in the day so she was our chocolate coating expert.

In between recipes, baking times and clean up we managed to fit in some silly photos. I'm sure lucky to have these gals as friends - they are pretty great.

Photobooth Tip: I grabbed a roll of Christmas wrapping paper and taped it to the wall and just rolled the whole thing to the floor and left it as is. After the party I rolled right back up and didn't waste the paper!

Jacob got home from work just in time to sample all the baked goods and finish our last cup of coffee. Lucky him.

I couldn't send Laura and Alison home empty handed. I got them the cutest mug, TONS of Folgers Perfect Measures so they can continue to make a perfect cup of coffee, fun tin to take all the treats home and a little candy.

It was a wonderful day!

Butter Cookies


Butter Cookies
*Dough does need to chill for 2+ hours.

Cookies
1 cup unsalted butter, softened
1 cup sugar
1 large egg
2 tablespoons orange juice
1 tablespoon vanilla
2 1/2 cups flour
1 teaspoon baking powder

Frosting
3 cups powdered sugar
1/3 cup unsalted butter, softened
1 teaspoon vanilla
1 to 2 tablespoons milk
Food color and sprinkles for decoration

In the bowl of a stand mixer, combine butter, sugar and egg, scrapping down bowl often, until smooth and creamy. Add orange juice and vanilla. Continue beating, scraping down bowl to ensure all is incorporated, until well combined. Gradually add the flour and baking powder; beat at low speed until well mixed.

Place three pieces of plastic wrap on a flat surface. Divide dough into thirds and drop each section onto the plastic wrap. Cover and shape into ball, flattened slightly. Refrigerate 2-3 hours or until firm.

Heat oven to 400 degrees.

Roll out dough, one-third at a time, on lightly floured surface (keeping remaining dough refrigerated), to 1/8 - to 1/4-inch thickness. Cut with 3-inch cookie cutters. Place 1 inch apart onto ungreased cookie sheets.

Bake 6-10 minutes or until edges are lightly browned. Let stand for a couple minutes before transferring to a cooling rack. Cool completely before frosting.

Time to decorate! Prepare frosting by combining powdered sugar, cup butter and teaspoon vanilla in bowl. Beat at low speed, scraping bowl often and gradually adding enough milk for desired consistency. Tint with food coloring or use colored frosting packs and sprinkles to decorate cookies.

Store cookies in airtight container.
